Mark's Challenge
Mark at Mark's Black Pot put out a challenge to create a recipe using oranges, apples, mint and meat. This is what I came up with.
Fruity Sweet and Sour Chicken
2 lbs chicken breast
1 cup flour
salt and pepper to taste
cut chicken into 1" pieces and coat with flour, salt and pepper
Lightly brown chicken in 2 tbsp oil using a 12" dutch oven with 24 coals underneath.
Remove from heat and add:
1 diced red bell pepper
2 cups cut up pineapple
2 10oz cans mandrin oranges
2 cups cut up granny smith apples
1/3 cup vinegar
1/2 cup lemon juice
2 tbsp soya sauce
2 cups sugar
Move 12 coals to the lid and place oven back on the other 12. Cook for about 30 min.
add:
2 tbsp finely chopped cilantro
1 tbsp finely chopped mint
2 tbsp corn starch mixed with 1/2 cup water
Cook another 15 min.
Serve over rice.
Note: The longer you cook the herbs the less flavour they will contribute.
